When the time came to upgrade the Costco bakery in Schaumburg, there was a lot that needed to get done on a piping hot schedule. Not only that, but it was vital to make extensive changes to the bakery while the location continued doing business.
With any refresh of an existing facility, there were any number of things to contend with. The pot wash, formerly sitting atop the floor, needed to be replaced, only now with water draining out of the floor through newly-installed pipes. Further, to improve on Costco’s already stellar cleanliness, as well as to upgrade the look of the bakery, fiberglass-reinforced walls and ceiling panels were installed. And, at the same time, old ovens and other equipment were replaced with new equipment to get the best performance.
The time it took to complete the job? Less than three weeks, despite having to work around the warehouse’s busy schedule. Of course, that’s the kind of results you can expect when you make responsiveness and attention to process part of the recipe.
